If I want counter outlets for my kitchen, would I be better using 12-2 with a 15amp breaker. I plan on setting up 3 outlets on the circuit, the first outlet would be a GFI will any GFI do

No, you would use a 20A breaker with #12.
Besides, 20A circuits are code required for kitchen counter receptacle circuits.
You can use either 15A or 20A GFI devices. 15A is fine though. No need for 20A receptacles on a circuit like this.
I know this sounds contradictory, but trust me. -
All kitchen outlets need be 20 amp. the only place a 15 amp breaker has use is lighting. any counterspace 24 inches or more needs an outlet. a free standing island needs at least one accessible outlet and not a surface (with the outlet face) flush with the counter surface. a tombstone outlet would do and an outlet mounted below the top on a side surface.Comment
