I pretty much understand how a toilet works but I'm not sure how the anti-siphon thing works or why it's there. Help

the anti siphoning thing is there to break the siphoning action of the reverse trap that's molded into the porcelain toilet base. the way a toilet works is that the water level in the bowl rises to the point above a neutral level to allow the system to drain and create a water "trap" to contain the sewer gases in the lower portion of the toilet and soil pipe. you could feasibly have a straight through fitting from the bowl to the soil pipe, but there wouldn't be any means of trapping the gases , so the bathroom would always smell. you don't want that!
