Can linoleum be installed over linoleum? How should the floor be prepped? Also, is it best to use the squares or a single sheet? If the squares are used, is there a chance that they will peel up?

You should never install vinyl flooring right on top of old vinyl flooring, the old flooring will telegraph through the new flooring and will eventually show the pattern through the new flooring. You need to install a 1/4" underlayment first, and then your new flooring.
Single sheet flooring is way better than the individual floor tiles. Here's a link that'll give you all the details of how to install a single sheet vinyl floor
