Standard Procedure for Checking hot water heater

Does anyone know the standard procedure for checking a hot water heater that does not produce hot water? A few days ago the water temperature coming out of the faucets became scalding hot. Then after 2 days the temperature decreased until now where there isn't any hot water. Just cold water coming out of the hot faucets. Thanks.

Is this a gas or electric water heater?

take a look in the illustrations part item #2. this has wiring diagrams for ALL hot water heaters. this will aid you in your troubleshooting. the top thermostat does all the work chances are its bi-metal is shot.
