We have an 18' peaked family room ceiling and the drywall tape is separating from the side wall where it meets the ceiling. This was repaired once before for the same problem. The pro that checked this out said that the heat and/or lack of humidity caused this problem. The proposed solution is to install crown molding to cover the drywall tape. Is this a good solution or is there a better approach?

It definitely sounds like some type of expansion and contraction issue. How well is that ceiling peak insulated? That might be part of the problem. I would say id crown would be an improvement to the room, go ahead. If it would look out of place i would look into why things are moving around from the temp differance.

For sure, crown molding would take care of it since it would hide the gap. But will it look right? If so, then go with it.
One thing you could try is retaping with a higher strength crack repair tape. See the blog post: Using Strait Flex Crack Repair Tape To Repair a Drywall Crack We used this tape on a problem crack above a door corner (lots of stress) and it is not showing any signs of re-cracking after a year.
